Coconut Berry Bircher Muesli By Karina Duncan

Serves 2


  • ½ cup rolled oats (gluten free is possible)
  • ¼ cup chia seeds
  • ½ cup berries (fresh or frozen)
  • ¼ cup coconut milk
  • ¾ cup coconut water
  • 1 tsp ground cinnamon
  • 2 tbsp chopped raw almonds
  • 2-3 tbsp coconut yoghurt (I use CoYo)
  • 1 tbsp coconut sugar (if you want a little more sweetness)

How To Make

Combine oats, chia seeds, berries, coconut milk, coconut water, cinnamon and almonds in a bowl or jar, and mix until all combined. Cover and place in the fridge for a couple of hours or ideally overnight. When you are ready to serve , stir through coconut yoghurt and top with a few extra berries and a sprinkling of coconut sugar.
