Gluten free, dairy free & refined sugar free

I LOVE banana bread, but it’s scary how much sugar, white flour and trans fats from margarine can be found in café and store bought versions. Well I am happy to say that this version is completely free from refined sugar, is gluten free and also diary free so great for anyone with intolerances. It also contains cinnamon which is not only flavourful but good for maintaining blood sugar levels. I love to serve it with a good dollop of tahini or raw almond butter, top it with some freshly sliced bananas along with a handful of toasted flaked almonds or coconut (or both!). Et voila! A yummy, clean and nutritious afternoon treat.


  • 1 2/3 cups of coconut flour
  • 1 tsp baking soda
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly grated nutmeg
  • 1 tsp cinnamon
  • 2 large eggs
  • 3 tsb maluka honey
  • 10 madjool dates, finely chopped
  • 1/2 cup coconut oil
  • 1 1/2 cups coarsely mashed very ripe bananas (3 large)
  • 2 tablespoons almond milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups walnuts, toasted and chopped

How To Make
Preheat the oven to 180 degrees and spray a metal loaf pan with non stick cooking spray, or line with baking paper. In a medium bowl, whisk together the coconut flour, baking soda, salt, nutmeg, and cinnamon to blend. In a large bowl, using an electric mixer on medium-high speed, beat together the eggs, dates and honey for about 8 minutes, or until the mixture is very thick and pale and the mixture forms a ribbon when the beater is lifted. Reduce the speed to low and gradually beat in oil. Beat in the bananas, almond milk, and vanilla. Add the flour mixture, and mix just until blended. Using a large flexible spatula, fold in the walnuts. Spread the batter into the prepared loaf pan. Bake for about 1 hour and 15 minutes, or until golden brown and a wooden toothpick inserted into the centre of the bread comes out clean. Let the bread cool in the pan on a wire cake rack for 10 minutes, then turn the bread out onto the rack. Turn the bread right side up, and then slice the bread and serve it warm, or let it cool completely before serving.
